Rockin’ Rum Punch
2 cups of Cranberry Juice
1 ½ cups Cranberry Syrup (from drunken cranberries)
3/4 cup lemon juice
1/2 cup blood orange, clementine or orange juice
4 limes juiced and zest (zest makes the punch pop)
3 grapefruits, 2 juiced and 1 cut into 1” wedges
1 cup Drunken Cranberries
Fresh Mint (to add at the end)
4 bags cranberries
zest of 1 orange
1 cinnamon stick
6 cups sugar
6 cups water
Make a simple syrup by dissolving the sugar into the water over medium heat. Add zest and cinnamon stick. Cook 5-10 minutes.
Add cranberries. Cook until they start to pop. You want the cranberries to maintain most of their shape. Strain out the cranberries, zest and cinnamon stick. Reserve the cranberry syrup for Rockin’ Rum Punch.
To make Punch:
Combine all ingredients in a pitcher to make rum punch. For an individual glass of punch, add 3 ounces of Rum Punch to a wine glass and 1 oz of Amber Rum (vodka would work well too). Make sure to get a spoonful of the fruit from the punch mix in every glass. Slap some fresh mint, add ice, top with soda.
A lovely trinity of fresh mint, slice of grapefruit and one drunken cranberry floating on top. Looks fantastic – your friends will Instagram!
